Mediterranean Kebabs

Bring a taste of the Mediterranean to your next barbecue. Inspired by the classic flavours of Greece, our lightly-seasoned Johnsonville Classic Style Sausage Meat is combined with cucumber, tomato, onion and lemon for a fresh, tasty spin on a BBQ favourite.

What You Need

  • TOMATO CUCUMBER TOPPING
  • 1 mini cucumber, sliced lengthwise into quarters and chopped
  • 3/4 cup tomato, chopped
  • 1/3 cup small onion, thinly sliced
  • 1/2 lemon, juiced
  • 1 tbsp olive oil
  • salt and pepper to taste
  • YOGURT GARLIC SAUCE
  • 1/2 cup greek style plain yogurt
  • 1 small garlic clove, crushed
  • 15 fresh mint leaves, chopped
  • salt and pepper to taste
  • KEBABS
  • 1 pkg (375 g) Johnsonville Classic Style Pure Pork Sausage Meat
  • 1/2 cup onion, chopped fine
  • 1/4 cup parsley, chopped fine
  • all spice, pinch
  • cinnamon, pinch
  • 4 skewers
  • pita bread, brushed with olive oil (per preference)

Preparation

  1. Chop, prepare and combine Tomato Cucumber Toppings ingredients into bowl and set aside. Prepare Yogurt Garlic Sauce ingredients and combine in another bowl. Set aside until ready to serve.

  2. Preheat grill to medium. Use your hands to combine the sausage meat, onion, parsley, all spice and cinnamon in a medium size bowl. Divide the meat mixture into 4 and press meat along the skewer, forming a long sausage shape. Repeat with remaining 3 skewers.

  3. Grill skewers for 4-5 minutes on each side or until cooked through.

  4. Gently grill and warm the pita for approximately 1-2 minutes (can be done in last minutes of cooking skewers). Place each pita on a plate (or platter) and top with a dollop of yogurt garlic sauce, grilled kebab skewer and a spoonful of tomato cucumber topping.
