What You Need

  • 1 pkg (13.23 ounces / 375 g) Johnsonville Tex Mex Style Pork Sausage Meat
  • 8 oz cream cheese
  • 2 cans (20 oz) diced tomatoes with green chiles
  • 1 cup corn, fresh or frozen
  • 1 cup cheddar cheese, shredded
  • Small bunch chives or green onions, finely chopped

Preparation

  1. In a medium sized pot over medium heat, brown Tex-Mex Sausage for 10-12 minutes, breaking it apart with a wooden spoon (it will release enough oil to lightly grease the pot).  When browned, remove excess oil by pushing a paper towel around the pan with a spatula. Discard paper towel and return the pot to medium heat.

  2. Cut cream cheese into pieces and stir into the cooked sausage until it's creamy.

  3. Add diced, canned tomatoes (do not drained), then add corn and shredded cheddar. Stir continuously over medium heat, until bubbly and cheese is fully melted.

  4. Remove from heat. Serve in bowl alongside tortilla chips. Garnish with chopped chives.
