Tomato and Sausage Casserole

What You Need
1 packageJohnsonville Mild Italian Sausages
1 tspolive oil
1yellow onion, chopped fine
2garlic cloves, crushed or minced
1celery stick, chopped fine
2peppers, yellow and/or red
1/2 tspground cumin
1/2 tspchili flakes
2cans (approximately 400g each), diced tomatoes
1can (approximately 400g), white kidney beans, drained
- Heat oil in medium casserole dish or pan and add onion, cooking for 5-6 minutes until soft and translucent. Add garlic, celery and peppers. Cook for 5-8 minutes stirring well.
- Increase heat to high and add sausages to dish. Cook for approximately 5-7 minutes and flip sausages. Cook for additional 5 minutes before reducing heat to medium. Add spices and mix well. Add in tomatoes and let mixture come to a simmer (approximately 8-10 minutes).
- Once simmering, cover dish with lid or aluminum foil. Let mixture continue to simmer for 35-50 minutes, stirring occasionally.
- Turn heat back up to high and add beans and spinach. Cook unconvered for 5-6 minutes, or until warm throughout. Sprinkle breadcrumbs on top and serve. Optional: after adding breadcrumbs, broil in oven on the lower rack for 2-3 minutes before serving.
