Easy Breakfast Burrito

Celebrity chef Mark McEwan has crafted the perfect breakfast burrito recipe using Johnsonville’s Original Breakfast Sausage to help make the most important meal of the day, the most delicious as well. With these fresh, flavourful ingredients all rolled together, this is one breakfast that you won’t want to skip.

What You Need

large eggs, beaten with a pinch of salt

(60 ml) tomatillo salsa or pico de gallo

cup
(175 mL) aged white cheddar

avocados, sliced

breakfast radishes, thinly sliced
1/4
bunch cilantro sprigs
1
large jalapeño, thinly sliced (optional)
Preparation
- Sauté sausage in a non-stick pan until browned and cooked through. Place on paper towels to drain and dispose of remaining grease.
- Melt butter in the sauce pan, add the eggs, and scramble for about 2 minutes. Add the sausage back to the pan and mix with eggs gently. Remove from the heat.
- Warm the tortillas and divide eggs/sausage mixture between tortillas. Top each tortilla with the cheese, tomatillo salsa, avocados, radishes, coriander and jalapeño.
- To form the burrito, fold the sides of the tortilla in towards the middle and roll up from the bottom. Serve immediately.
