What You Need
2 tbsp(30 mL) butter
8large eggs, beaten with a pinch of salt
1/4 cup(60 ml) tomatillo salsa or pico de gallo
3/4 cup(175 mL) aged white cheddar
2breakfast radishes, thinly sliced
1/4bunch cilantro sprigs
1large jalapeño, thinly sliced (optional)
- Sauté sausage in a non-stick pan until browned and cooked through. Place on paper towels to drain and dispose of remaining grease.
- Melt butter in the sauce pan, add the eggs, and scramble for about 2 minutes. Add the sausage back to the pan and mix with eggs gently. Remove from the heat.
- Warm the tortillas and divide eggs/sausage mixture between tortillas. Top each tortilla with the cheese, tomatillo salsa, avocados, radishes, coriander and jalapeño.
- To form the burrito, fold the sides of the tortilla in towards the middle and roll up from the bottom. Serve immediately.
