Caribbean-Inspired Sausage Curry

coconut milk

Preparation
- Combine curry powder, garlic powder, thyme, salt and allspice to make spice mix.
- In a dutch oven or large pot, add oil and saute sausage meat for approximately 3-5 minutes. Add spice mix and combine with meat until evenly coated.
- Add green onions, onions, tomatoes and potatoes and cook for another 3-5 minutes. For a thicker curry, add approximately 1 tablespoon of flour.
- Add chicken stock, coconut milk and the bay leaf. Bring to a boil and cover. Let simmer on low heat for approximately 15-20 minutes, until potatoes are tender.
- Serve over rice and garnish with lime wedges and additional chopped green onions.
