Holiday Breakfast Frittatas

What You Need

olive oil
1/4 cup
scallions, chopped
1
garlic clove
2 cups
spinach, chopped

eggs
1/4 cup
milk
1/4 cup
sun dried tomatoes
1/4 cup
fresh herbs, chopped (basil, parsley, tarragon etc. per preference)
red pepper flakes, to preference

salt and pepper, to preference
Preparation
  • Preheat oven to 350F. Preheat mini cast iron skillets in oven if using for recipe (can alternately use ramekins, greased).
  • Over medium, heat a drizzle of olive oil in medium pan. Add sausage, breaking apart meat while cooking until browned (approximately 10 minutes). Drain the fat. Add the scallions, garlic, spinach and salt and pepper to taste, to the pan. Cook for approximately 5 minutes and set aside.
  • Whisk eggs and milk in a medium bowl, and add the tomatoes and cooked sausage mixture. Pour mixture into preheated skillets and bake until eggs set (approximately 12 minutes, adjust cook time for larger skillets).
  • Garnish with fresh herbs and red pepper flakes. Let cool for 1-2 minutes and serve.
