red potatoes

hard boiled eggs, chopped

celery ribs, chopped

small onion, chopped
2 tbsp
sweet pickle relish
1 3/4 cups
mayonnaise
1/4 cup
dijon mustard
1/4 cup
beer
1/4 tsp
salt

1/4 tsp
pepper
Preparation
  • Place potatoes in a large pot and cover with water. Bring to boil. Reduce heat; cover and cook for 20-25 minutes or until tender. Drain and rinse in cold water. Peel potatoes and cut into cubes. Place in large bowl.
  • Cut Smoked Polish Sausages into 1/2 inch clices. Add sausage, eggs, celery, onion and pickle relish to bowl with potatoes.
  • In another bowl, combine mayonnaise, Dijon mustard, beer, salt and pepper. Pour over potato mixture and toss to coat.
  • Cover and refrigerate for several hours before serving.
