What You Need
4
cups
all-purpose flour (unbleached)
2
sticks
unsalted butter, cut into pats and chilled
1
tsp
salt
4
tsp
baking powder
1 2/3
cup
buttermilk
1
cup
cheddar cheese, shredded
1/4
cup
chives or green onions, chopped fine
2
tbsp
salted butter, melted
Preparation
- Preheat the oven to 400F.
- Cook sausage according to package instructions and cut into 1/2″ coins. Set aside for later.
- Combine all dry ingredients and unsalted butter in a food processor or blender, and pulse until mixture forms fine crumbs (careful not to over mix). Can also use two forks to blend. Do not use your hands as chilled butter must remain unmelted in dry mixture.
- Add buttermilk while mixing for an additional 3-4 pulses.
- Place the dough in a bowl and blend in the sausage, cheese and chives until evenly mixed.
- Gently divide dough into 12 even-size balls. Do this fairly quickly so as not to start melting butter pats with the heat from your hands. Place balls in a non-stick casserole dish or on a baking tray. Brush the tops of each ball with the melted salted butter.
- Place casserole dish or baking tray in the oven and bake for approximately 15-20 minutes, or until tops are golden brown and cooked through. Can serve immediately or refrigerate for later.
