Spicy Sausage Queso Dip

What You Need

cream cheese
2 cans
(20 oz) diced tomatoes with green chiles
1 cup
corn, fresh or frozen
1 cup
cheddar cheese, shredded
Small bunch
chives or green onions, finely chopped
Preparation
  • In a medium-sized pot over medium heat, brown Hot Italian Sausage for 10-12 minutes, breaking it apart with a wooden spoon (it will release enough oil to lightly grease the pot). When browned, remove excess oil by pushing a paper towel around the pan with a spatula. Discard paper towel and return the pot to medium heat.
  • Cut cream cheese into pieces and stir into the cooked sausage until it’s creamy.
  • Add diced, canned tomatoes (do not drain), then add corn and shredded cheddar. Stir continuously over medium heat, until bubbly and cheese is fully melted.
  • Remove from heat. Serve in bowl alongside tortilla chips. Garnish with chopped chives.
