Sausage and Egg Scramble
Add some savour and spice to your weekend brunch or breakfast. This Sausage and Egg Scramble adds mushrooms, peppers, onions and homefries to fluffy eggs for something hearty to start your day. The real treat is the addition of our Johnsonville Smoked Cheddar Pork Sausages. This recipe will make you a morning person!
What You Need
1 tspcooking oil
1 package(650g) McCain Breakfast Homefries, frozen
2 tbspbutter, unsalted
1/2medium white onion, diced
1/2green pepper, seeded and chopped
1 1/2mushrooms, sliced
1/4 cupwhole milk
- Add oil to skillet and heat on medium. Add frozen potatoes in single layer and cook for 15-18 minutes, turning halfway through. Once soft and golden brown, set aside and keep warm.
- Melt butter in same skillet over medium heat. Add sausage and cook for approximately 3-4 minutes, stirring occasionally. Set aside.
- Add vegetables to skillet and season to preference with salt and pepper. Cook on medium until mushrooms have browned and vegetables have softened, approximately 8-10 minutes.
- In a bowl, whisk eggs and mik, and season with salt and pepper to preference. Add sausage and potatoes back into the skillet with the vegetables and stir to combine. Add egg mixture and cook, stirring regularly, until eggs have set, approximately 2-3 minutes. Plate and serve immediately.
