What You Need

canned crushed tomatoes

canned black beans, rinsed and drained

green chili, diced

corn (frozen or fresh off the cob)

Monterey Jack cheese, shredded
2 cups
cheddar cheese, shredded
1 bunch
cilantro sprigs, chopped, shredded
Preparation
  • In a large skillet over medium heat cook Johnsonville Hot Italian sausage, breaking it up as it cooks with a wooden spoon (approximately 5 minutes). Add the tomatoes, black beans, green chilis, and corn, then stir to combine. Turn heat to medium-low, bring to a lower simmer for 5-8 minutes, stirring occasionally.
  • Perheat oven to 350F. In a 9×13″ baking dish, spoon about 1.5 cups of meat sauce into dish to lightly coat the bottom. Place 6 corn tortillas over the sauce (overlapping in some areas is expected). Spoon half of the remaining sauce over the tortillas and gently spread out evenly. Sprinkle half of both cheeses over the meat sauce. Repeat with 6 more tortillas, remaining sauce and top with remaining cheese.
  • Cover with foil, bake for 30 minutes, uncover and bake for an additional 10 minutes. Add 1-2 minutes under the broiler if you want the cheese bubbling and slighly golden. Remove from the oven, allow the casserole to sit for 5 minutes, sprinkle with cilantro and serve.
  • Optional: serve with guacamole, sour cream or top with crumbled tortilla chips
