Sweet Potato and Sausage Soup

Prefer your soups on the sweeter side with a little kick? Look no further than our Sweet Potato and Sausage Soup. We’ve made this one that much better by using our Johnsonville Hot Italian Sausage Meat for a bold addition. Have some bread on hand, because you’ll be soaking up every drop!

What You Need
1 tbsp
olive oil
cloves of garlic, minced
large yellow onion, diced
sweet potatoes, peeled and diced
4 cups
chicken broth
3/4 cup
small pasta shells
4 cups
mixed greens (kale, swiss chard), roughly chopped
salt and pepper to taste
Parmesan cheese, grated, for garnish
  • Heat oil over medium-high heat in large pot. Add garlic and onion, and cook for approximately 5-6 minutes (or until onion is translucent). Season with salt and pepper.
  • Add sausage meat and cook for approximately 5-6 minutes or until meat is brown, breaking up meat while cooking.
  • Add sweet potatoes, broth, 2 cups of water and bring to boil. Add pasta and cook with 2-3 minutes taken off package timing instructions.
  • Reduce heat to a simmer and add greens. Cook for approximately 4-5 minutes or until pasta is tender and greens are wilted. Serve with Parmesan cheese as garnish.
