Sweet Potato and Sausage Soup

What You Need

olive oil

cloves of garlic, minced
1
large yellow onion, diced

sweet potatoes, peeled and diced

chicken broth
3/4
cup
small pasta shells

cups
mixed greens (kale, swiss chard), roughly chopped
Preparation
- Heat oil over medium-high heat in large pot. Add garlic and onion, and cook for approximately 5-6 minutes (or until onion is translucent). Season with salt and pepper.
- Add sausage meat and cook for approximately 5-6 minutes or until meat is brown, breaking up meat while cooking.
- Add sweet potatoes, broth, 2 cups of water and bring to boil. Add pasta and cook with 2-3 minutes taken off package timing instructions.
- Reduce heat to a simmer and add greens. Cook for approximately 4-5 minutes or until pasta is tender and greens are wilted. Serve with Parmesan cheese as garnish.
