Banh Mi Sausage Sandwich

sandwich buns, french baguette (personal size or cut to approx. 6')

spicy mayonnaise (chipotle or sriracha), preferred brand of premade sauce

Pickled Vegetables

water
1/3 cups
rice vinegar
1.5 tbsps

carrots, matchstick sliced

radishes, thinly sliced

jalapeno pepper, thinly sliced
Preparation
  • Prepare the pickled vegetables: mix together the water, rice vinegar, sugar and salt, and stir well to dissolve the sugar and salt. Add the carrots, radishes and jalapeno slices and let marinade for 2 hours, or cover and refrigerate until ready to use.
  • Form 9 small patties from each package of sausage meat, for a total of 18 patties. In a large skillet over medium heat, cook for patties for approximately 3 minutes on each side. Cook about 9 at a time so you do not overcrowd the pan. When cooked through, assemble sandwiches.
  • Slice the buns lengthwise. On the bottom of each bun spread the pre-made spicy mayonnaise, top with 3 Salt and Pepper Pork Sausage patties, pickled vegetables, cucumber slices and a sprig or 2 of fresh cilantro.
  • Spicy mayo alternative: to make your own, mix small spoon of preferred choice of hot pepper sauce or dried seasoning into 1/4 cup of mayonnaise. Adjust to taste preference.
