Beer & Cheddar Sausage Soup

What You Need

4 cups
beef stock
1.5 cups
bottle of beer (Can substitute gluten-free beer)
1 cup
carrot, chopped
1 cup
celery, chopped
small onion, diced
cloves of garlic, minced
1 tsp
red pepper flakes
1 tsp
sea salt (or more if desired)
1/2 tsp
black pepper
8 oz
cream cheese
1 cup
heavy cream

2 cups
sharp cheddar cheese, grated
  • Heat up your slow cooker on the highest setting.
  • Add sausage, beef stock, beer, carrot, celery, onion, garlic, red pepper flakes, sea salt and pepper to slow cooker. Cook on high setting for approximately 4 hours.
  • Add heavy cream, cream cheese, and cheddar cheese, and stir using a whisk until thoroughly mixed. Add more salt and pepper to taste, if desired. Cook for another 2 hours.
  • Serve with cheddar cheese or sour cream as garnish.
