Beer & Cheddar Sausage Soup

bottle of beer (Can substitute gluten-free beer)

carrot, chopped

celery, chopped

small onion, diced

cloves of garlic, minced

red pepper flakes

sea salt (or more if desired)

cream cheese

heavy cream

sharp cheddar cheese, grated
Preparation
- Heat up your slow cooker on the highest setting.
- Add sausage, beef stock, beer, carrot, celery, onion, garlic, red pepper flakes, sea salt and pepper to slow cooker. Cook on high setting for approximately 4 hours.
- Add heavy cream, cream cheese, and cheddar cheese, and stir using a whisk until thoroughly mixed. Add more salt and pepper to taste, if desired. Cook for another 2 hours.
- Serve with cheddar cheese or sour cream as garnish.
