Huevos Rancheros

Combine this traditional Mexican dish with our Johnsonville Hot Italian Style Sausage Meat for your next Sunday morning meal. Our preseasoned ground pork adds some spice to this Huevos Rancheros and the kick you need to get moving in the morning. The addition of diced tomatoes, black beans, eggs, cheese, and avocado round out this breakfast meal.

What You Need

olive oil (or other preferred cooking oil)

medium onion, diced

(2 cups) diced tomatoes w/ chili (or preferred flavour and spice)
1 can
(2.5 cups) black beans, rinsed and drained

corn tortillas (1-2 per person)

cheddar cheese, shredded

avocado, sliced
Preparation
  • In a large skillet of medium heat, add a small drop of oil, saute the onion until softened (approximately 8 minutes). Add the sausage to the skillet and use a wooden spoon to break it up as it cooks. When it is fully cooked (about 10-12 minutes), stir in diced tomatoes and the drained black beans. Bring this to a gentle simmer for about 5 minutes on medium-low heat, cover and keep warm.
  • In another skillet, over medium-high heat add a drop of oil and place 3-5 tortillas (it’s fine to have some overlap) in the pan to warm for about 20 seconds on each side. Continue with remaining tortillas, set aside to keep warm.
  • In the same pan, add a little more olive oil to coat the bottom and fry or scramble the eggs to your liking.
  • Divide the tortillas onto the plates, add a large spoonful of the sausage bean mixture. Nestle the eggs in the sausage mixture, sprinkle cheddar cheese on top and finish with slices of avocado.
