Quick Sausage Cassoulet

What You Need

slices bacon, diced
1 tbsp
olive oil

chopped onion

chopped carrots

garlic cloves, chopped

sprigs fresh thyme

all-purpose flour
1 1/2 cups
canned crushed tomatoes
1 can
(540 mL) cannellini beans, drained and rinsed
1 cup
chicken broth
8 to 10
cherry tomatoes
salt and fresh cracked black pepper
Preparation
  • Preheat oven to broil. Place oven rack at least 7 to 9 inches below top element. Place all the sausages but one on the rack of a broiler pan. Cook in oven for 10 minutes, turning a few times to grill all over. Once half-cooked, remove and set aside.
  • Meanwhile, remove casing from reserved sausage.
  • In a heavy pot, heat olive oil. Crumble sausage meat with a spoon and combine with diced bacon. Brown for 5 minutes. Remove from pan and set aside. Into pan, add onion, carrots, garlic and thyme, then cook for 5 minutes or until tender.
  • Sprinkle with flour and mix. Add in crushed tomatoes, beans, chicken broth as well as reserved bacon and sausage mixture. Cover and let simmer for 10 minutes, stirring from time to time.
  • Gently press half-cooked sausages into bean mixture, add cherry tomatoes and cook for another 10 minutes or until tomatoes start to burst lightly. Remove thyme and serve.
